New month. New start.

Wow.  January surely did whiz by.  I can hardly believe that tomorrow is the beginning of a new month and a good month at that.  February means it is Evan's 25th birthday AND our 2 year anniversary!!  


With this new month right around the corner, we're making a change.  Yeah, that "post holidays 30 days strict" thing didn't last more than 5 or so days.  This time no promises will be made as it has become evident that we break our paleo commitments EVERY SINGLE TIME.  And every time it's an embarrassment and every time we gain weight and feel terrible about ourselves.  Today we ate lunch at a sandwich shop called Which Wich? just because we had coupons for free sandwiches.  Now, they were delicious, toasted sandwiches but far from paleo.  We said out loud in the parking lot "NO MORE!"  And so there you have it, another restart to our paleo lives.  We had a snack of coconut nested eggs this afternoon and once Evan returns from flag football practice we'll consume some leftover turkey meatloaf with a side of sweet potato fries.  The day will end paleo and continue through tomorrow and the next day and so forth.  My weight tonight is 121 lbs.  Ouch.  I was holding strong at 110 while being mostly strict paleo.  Wish us luck and I'll see you back here tomorrow :)

A Tanzanian kind of morning

I'm working a "late" shift today (10:30-7) but was out of bed early as I had to take advantage of the time to work on that surprise I was mentioning previously ;) I ate breakfast with Evan which consisted of leftover egg muffins and a couple bacon slices.  We still have four muffins remaining for tomorrow!  Makes early mornings much simpler to have already prepared meals.  The avocados we purchased on Wednesday are still rock hard :/ I am wondering if there is a way to expedite the ripening process...?


We stopped by Barnie's Coffee Kitchen last night to pick up some coffee filters and were lucky enough to be given a few samples from the brewmaster on duty.  This morning we enjoyed a cup of Tanzanian Peaberry.  So good!

Lunch today was leftover bangers and mash from dinner last night.  I had to reheat it in the microwave at work and find myself a cozy corner to consume and to start reading my new library book, The Hunger Games.  I have several friends who have read the trilogy and have seen the movie so I wanted to see for myself what the hype was about.  So far, I like it.


I ended up getting out of work a bit late tonight as unexpected events occurred.  BUT I came home to a warm dinner thanks to Evan who had our spaghetti leftovers heated with some green beans.  I didn't put my fork down between bites and I didn't chew very well.  Guess I was hungry.  And now, I think it's time for bed already.  I've got another long day tomorrow so rest is very much needed.

It's gonna be a bright, sun-shiny day!

Good morning friends :)
Today is my last day to be lazy and to have slept in as I must be back at work tomorrow.  Most people would probably be quite distraught over this thought but thankfully, I do love my job!  Also, most people probably wouldn't consider getting out of bed at 7:30 a.m. as sleeping in...  When one has to typically wake at 4:30, 7:30 is DEFINITELY a nice extension of sleep.  Today I had somewhat of an alarm clock who was up with the sun and felt I should be up as well-

Because this is the final day of no work until next week I have lots to accomplish.  There are a few meals to make for the busy, work-filled weekend as well as a few other things.  On a random side note, Obama is at Disney World to promote tourism.  Luckily I have no need to leave my house as I'm sure the roads surrounding the theme parks will be mighty slow-moving!


Today's meals:


We prepped and baked breakfast last night as Evan had to be up early for work.  This way we just had to pop a couple egg muffins in the microwave and cook a couple slices of bacon.  We wanted to top the muffins with avocado but the ones we purchased are not quite soft enough for enjoying.  Bummer.  This egg muffin recipe is taken from Paleo Comfort Foods' cookbook (we just got it for Christmas!)

I came across an interesting article this afternoon on The Healthy Home Economist blog about coconut and almond milk in cartons and the ingredients that make the products an unhealthy buy.  I had no idea!  I will certainly heed this warning and start purchasing my milks more wisely or make my own.



I don't have any photos of today's lunch as it was just leftovers of last night's shrimp scampi dinner.  If you want to see a picture of it just scroll down to yesterday's post :)  And as for dinner, we tried a brand new recipe from Paleo Comfort Foods' cookbook.  Bangers and mash.  It was delicious!

We didn't stop with dinner.  We decided to make dessert!  Noatmeal raisin cookies from Make it Paleo's book.

We're Back

The holidays were a major downfall for Evan and I.  Sure, we could have stood strong and passed up the tantalizing chocolate-covered pretzels, sweet sweet sugar cookies and all those other "goodies" stocking the shelves and homes of so many.  We didn't.  We were weak and are embarrassed to say so.  Not only were we eating poorly through the holidays but it continued into the new year!  Yep.  Today is January 18th as you are all aware and we have just now, today, decided our poor eating needed to STOP.  Today started our 30+ days of strict Paleo.  Again...  All it took was noticing how we were beginning to feel (chunky, sluggish, irritable and bloated) and realizing I have gained over 10 lbs since pre-holidays. Totally unacceptable.  My goal is to post each day on our progress and what we're making/eating and how we're feeling.  May the force be with us as we obviously need all the will power and help we can get!
