Breakfast

Noatmeal
Ingredients:
2 small handfuls of nuts (almonds/walnuts)
2 tbsp ground flax seed
1/2 tsp cinnamon
pinch of nutmeg
pinch of ginger
1 tbsp coconut butter (or almond)
1/2 banana
1 egg


Serves 1
 Grind nuts in food processor with flax and spices.  Mash banana in bowl, adding eggs and coconut butter.  Combine nut mixture with egg mixture and heat in microwave or on stovetop until eggs are cooked through.  Stir throughout cooking.  Add a bit of almond milk to achieve desired consistency.  


Coconut flour pancakes from Make it Paleo cookbook
1/4 c coconut flour
4 eggs
1 tbsp coconut milk
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp baking soda
1 tsp pure maple syrup (optional)


Banana nut and raisin topping:
coconut oil
1 banana
handful of raisins
1/4 c pecans or nuts of your choice, chopped


Serves 2


Blend all pancake ingredients with hand mixer.  Heat coconut oil in non-stick frying pan over low to medium heat.  Pour 1/8 c batter into pan and cook for 2 minutes, flip, then cook for 2 more minutes (or until golden brown).  TOPPING: Heat coconut oil in frying pan on medium heat.  Slice banana and add to frying pan.  Sear banana slices then flip.  Add nuts and lightly toast with banana.  


Almond Butter Banana Pancakes
Ingredients:

2 bananas, 3 tbsp nut butter, 1/4 c flax seed meal, 1 tsp agave, 
1 tsp vanilla, 2 eggs, 3 tbsp olive oil

Smoosh bananas in bowl.  Add eggs, flax, nut butter, vanilla, agave and stir to combine.  
Heat olive oil over medium heat and measure out batter w/ coffee scoop.  
Cook few mins on each side.  Delicious!!!



















Hot Nutty Cereal
1 C almonds or pecans, 1 medium sized apple, quartered, 1  Tbsp cinnamon, 1 C water
Makes 2 cups. Place all ingredients in blender and puree. Pour into medium sized saucepan. You may need to rinse the blender with an additional cup of water to get all the cereal. Bring to a boil. Reduce temperature immediately and allow to simmer for 5 minutes covered. If thicker consistency is desired, allow to simmer longer.

Peach and Pecan Scramble
1 tsp olive oil, 1/2 peach, 2 tbsp chopped pecans, 2 eggs, 1 tbsp unsweetened applesauce, 1/8 tsp cinnamon
Heat oil over medium.  Add peaches and pecans to skillet, stir fry for 2-3 mins.  Crack eggs into bowl, add applesauce and cinnamon, beat well.  Add to skillet, mixing often.  When eggs have set, serve.
Salmon Scramble
1 lb package frozen veggies, 1 can salmon, 1 tbsp rosemary, 1 tsp cumin, 1 tsp sea salt, pepper to taste, egg2
Place frozen veggies in saucepan w/ lid, cook until just tender.  Add seasonings and cook another 3-5 mins, mixing, until salmon is heated thoroughly.  Cook eggs sunny side up :)
